I was a teenager when I experienced the best chicken salad sandwich I ever had. What was so memorable you ask? The grapes.
Since then, I’ve tried a lot of fancy chicken salad recipes but discovered my favorite way is to keep it simple.
While I like the flavor of celery, I do not like the texture. I know, I’m weird – I feel the same way about pineapple… Anyway, I can get the same taste by using celery seed instead.
I don’t think I have ever made this salad the same way twice. Sometimes instead of honey mustard, I’ll use Dijon. Or I’ll add a pinch of rosemary and thyme if I desire a more savory taste reminiscent of my favorite roasted chicken dish.
Let your tongue decide!
Mix all ingredients together and chill. Start with the smaller amount of mayonnaise. Add more a little at a time to achieve desired consistency. Simple Chicken Salad
