I was a teenager when I experienced the best chicken salad sandwich I ever had. What was so memorable you ask? The grapes.

Since then, I’ve tried a lot of fancy chicken salad recipes but discovered my favorite way is to keep it simple.

While I like the flavor of celery, I do not like the texture. I know, I’m weird – I feel the same way about pineapple… Anyway, I can get the same taste by using celery seed instead.

I don’t think I have ever made this salad the same way twice. Sometimes instead of honey mustard, I’ll use Dijon. Or I’ll add a pinch of rosemary and thyme if I desire a more savory taste reminiscent of my favorite roasted chicken dish.

Simple Chicken Salad

  • Prep Time: 20 mins

Ingredients

  • 3 C rotisserie chicken - diced
  • 1 lg. bunch of red, seedless grapes - sliced in halves or quarters
  • 1/4 tsp celery seed
  • 1/8 tsp black pepper
  • 1/4 - 1/2 tsp of salt (to taste)
  • 1/2 tsp marjoram (optional)
  • 1/8 tsp ground thyme (optional)
  • 2 T honey mustard
  • 1/2 - 3/4 C mayonnaise (to taste)

Instructions

  1. Mix all ingredients together and chill.

Notes

Start with the smaller amount of mayonnaise. Add more a little at a time to achieve desired consistency.
