Raspberry Dream

Raspberry Dream

My mother knows how to make a memorable meal, and her desserts are even more so (if that’s even possible). I enjoyed this dessert while growing up and it continues to be one of my favorite go-to’s when I need something easy, refreshing, and delicious!  There

7-Up Cake

7-Up Cake

Some great friends introduced this to me many years ago and boy, it was never forgotten! I usually don’t put any kind of glaze on it (although you certainly could) since I think its just perfect all by itself. My favorite part is the slightly crunchy, caramelized edges.

Cinnamon Rolls (aka SIN-amon)

  • Yield: 24 rolls (divide in half for 12)
  • Cook Time: 15-20 mins

Ingredients

  • 3 1/2 C warm water
  • 3/4 C sugar
  • 1/2 C oil
  • 6 Tbsp yeast
  • 1 Tbsp salt
  • 3 eggs
  • 10 1/2 C flour - approximately
  • 1 C sugar
  • 1 Tbsp cinnamon
  • 4 oz. (1/2 brick) cream cheese, softened
  • 1/4 C butter, softened
  • 1 C powdered sugar
  • 1/2 tsp vanilla
  • 1/2 tsp salt

Instructions

  1. In a large mixing bowl, whisk together the first four ingredients and let sit for 15 minutes.

  2. Using a dough hook, add 1 Tbsp of salt, eggs, and one cup of flour at a time until the dough pulls away from the side of the bowl and isn't sticky to touch. Continue to knead for 10 minutes and let rest for another 10 minutes.

  3. Place the dough on an oiled counter and divide in half. Press each half into a rectangle. Pour 1/4 C melted butter over each half and gently rub into the dough. Mix 1 C of sugar and cinnamon together and sprinkle evenly over the butter.

  4. Roll each half up and divide each piece again, and then again making two more divisions to make 12 rolls for each section.

  5. Let sit for 30 minutes or so until they rise a bit.

  6. Bake in a 400 degree oven for 15-20 minutes.

  7. To make the cream cheese frosting, mix the cream cheese and butter until creamy. Add the sugar, vanilla, and salt and mix until smooth. Spread on the partially cooled rolls and enjoy!

Notes

For easier clean-up, line your baking sheets with parchment paper.

This makes a large batch. Share with your friends and neighbors or divide the recipe in half.

Mom’s Perfect Pie Crust

Mom’s Perfect Pie Crust

There is a legacy in my family. My mother is FAMOUS for her pies and her pie crust is PERFECTION. I was a bit intimated at first when trying to learn this skill but soon learned that ‘practice makes perfect’. Practice and a little
