Here’s a different spin on the blueberry muffin.   Adding sweet strawberries to these perfectly balanced the bits of blueberry tartness. The real question is: Are these muffins or are these cupcakes? You be the judge.    

Ham Salad

Ham Salad

I grew up with my mother making ham salad sandwiches. 

These are super easy to make and tastes great as a sandwich or even as a dip for crackers or toasted bread.

Ham Salad

  • Prep Time: 20 mins

Ingredients

  • 1 lb ham, cut into large cubes
  • 1/2 C mayonaise
  • 1/4 C Miracle Whip
  • 1 tsp brown sugar
  • 1/2 C sweet relish
  • ground pepper to taste
  • pinch of cayenne

Instructions

  1. Place the ham into a food processor and process into small pieces. (If you have a meat grinder - use it here).

  2. Combine ham with the remaining ingredients and mix well.

Notes

I use homemade zucchini relish in place of the sweet relish.
For a less sweet version - omit the Miracle Whip and brown sugar.
